We are and have been.

Compile ffmpeg with AVX2 on a Skylake CPU and separately compile it to top out at SSSE3.
Then benchmark a CPU encode with both version of FFMPEG, you'll find the AVX2 version significantly faster on the same CPU.

You'll see less benefit if you're running older software or new software compiled with old compilers.
