Easy level: change your email to ProtonMail, use DDG and searx instances for searches. Use Signal. ProtonMail and Signal can make your e-mails and messages private from companies and the government.
To protect your browsing history from advertising companies: install uBlock Origin and enable all the lists from Privacy, Social and Multipurpose lists. Disable third-party cookies in your browser. If Google is included in your threat model, don't use Chrome. Learn how cookies work and use a extension to delete them (Self-Destructing Cookies is pretty good, unfortunately no alternative for Chromium is as easy to use).
To protect your browser history from your ISP and/or the government, use Tor. Note that using Tor is slow, so I recommend to use it if you really want to make your browsing history anonymous at any cost. Your chats and e-mails are far more important and its all OK as long as they are end-to-end encrypted.
