Do CRTs degrade over time even if unused (kinda like Li-Ion cells, or data on an SSD)? How to fix a large CRT which has shit convergence (if you calibrate it at the center, it will still be bad towards the corners etc.)? How to mitigate the loss of contrast which the tube suffers over time?

The isolation of the high voltage coil and cable tends to degrade if not well stored. (Humidity is the main factor here)
That can lead to damage of other components if the current leaks to them.
I believe there are a lot of replacement coils still around but are chink made and very low quality so they dont last long.
Capacitors can degrade over time but more with usage or if exposed to high temperature changes. Those can always be replaced but it's a lot of work.
Tldr: store them well or be prepared to use a multimeter and a soldering iron.

At those prices I'd buy both if they're in good working condition.
You should be thankful that you even have this choice to make because I've been looking for a decent CRT locally for about 8 years with no luck.

If you really want to try to choose just one, I can offer some comparison.
The Sony has a 121 KHz horizontal scan versus 115 KHz for the NEC, so the Sony can handle slightly higher resolution and refresh rate combos. Grille pitch is listed at .24mm for both, so sharpness and detail should be about the same for both. The Sonys are infamous for having G2 compensation issues which lead to washed out black levels, so watch out for that. I don't think the NECs suffered from that problem, so that might be a reason to go NEC instead.
