My squeezeboxes are dying, and their server is screwed up (no longer plays DTS and DolbyD). What's the modern replacement for them? I guess all I want is a device that can read a remote file system and play the audio (FLAC, DTS, DolbyD, 5.1 support is mandatory) in high quality over optical or coax output (modern connectors are useless because I still have a lot invested into high quality audio equipment that just keeps working).

Some RasPi (or clone) running mpd and a phone/tablet to control it. USB DAC optional. I think some shit that does exactly this already exists for RasPi, you may not even have to set up everything yourself, though you can definitely start from whatever base Linux install and DIY if you want.
What do squeeze boxes do? Google isn't providing a solid answer.

network music streaming?

tl;dr: high quality DRM free network music streaming to DRM free connectors.
One interesting feature that got eventually killed when Logitech took over was, Squeezebox can pass through DTS and DolbyD digital stream to receivers that are able to decode it even though it can't decode it itself. I'm sure the reason for it no longer supported is ineptitude, not malice.
And a decision to write the streaming server in Perl was a braindead one, too.
