Mint is good because it comes with all the codecs you will probably need and is average user friendly. I prefer XFCE, but Cinnamon is alright also, though better on newish computers.

A big difference is their philosophy on updates. Ubuntu by default updates everything, but Mint by default wants to test things first. To change this, go into update manager preferences and enable all levels of updates.

You can install multiple DEs and choose which one you want to use at login.
I would install vanilla ubuntu (default is unity) and then the different DEs - cinnamon (from ppa:embrosyn/cinnamon), KDE, and Mate are the most popular non-unity DEs

For noobs, Ubuntu works best. Linux Mint gives you the illusion of a start menu but for laptops, Cinnamon is a heavy DE and not power efficient. Also it is slow and buggy compared to Unity or Gnome 3.

Security and resources.

If you just want an OS to do normal stuff like office or web surfing. You could just use over the counter solutions such as uBlock Origin, HTTPS Everywhere and you'll be covered to what it is called the application layer and with common sense you'll be covering the user level. Linux has a very good security due to its inner abstractions (modularity and open source as an example), despite having more vulnerabilities than other OS (because there is public disclosure) the ways of exploiting them is ery impractical that it would require direct interaction with your computer (like handing it to someone). Also if you need to run it on old hardware you can still choose the Linux Mint XFCE edition, which is similar to Windows XP in usage and user interaction. You would choose Linux Mint for privacy (because of the Amazon' deal with Ubuntu) and stability (although you won't really notice it) over Ubuntu. You would choose Linux Mint over Debian, because of a tradeoff between security (not that much) and "bloat" for the sake of ease of use and quickness of deployment (not that you can't read how to setup Debian post install).
