I use Ubuntu and I encrypted my entire HDD & also I encrypted the home folder, all that in the installation process.
How safe is this encryption? I can do anything I want to do and I can keep whatever I want on the PC?
I mention that both passwords for those are very complex and hard, 25 characters with letters, numbers, special characters etc.

If you're asking whether it's safe enough to keep your kiddie porn on it, yes.
If you're asking whether it's safe enough to keep state secrets on it, then no.

Why is a no for the state secrets?
They don't have quantum computers, right?

According to Snowden, the NSA can break a 10 character password on an encrypted disk within 3 days with just brute force. It'll work but you gotta make sure your password is about 32 characters long.

Using what scheme? luksFormat has a shit ton of options. For example mine is set up to iterate about 5 seconds to hash my password. It would take a computer system 16 trillion times more powerful than mine to try every combination of letters and numbers with 10 characters. Mines a lot longer than 10 characters and they're better off breaking the aes key directly. I'm just wondering how much computing power they have lying around.
Any word on how fast they can break aes256?

I wouldn't be surprised if they did. But anyway, you don't need that. All you need is a mathematical weakness in the algorithm, which NSA would be among the first to find if there is any.
