As a system admin who has just moved to north america and been caught off guard with just how many positions require osx experience.
Is a mac mini the easiest way of getting good experience with osx? I'd end up using it for torrenting as well as some email and ftp services but I'm debating between a mini and an old mcp.

Ive got a mini set up as a server at home doing what you have plus acting as a git server. You probably don't need to do it if you have linux admin experience, there isn't much difference that you can't google on the spot

If you've ever used BSD you can admin OS X.
if you have a desktop/laptop with an intel cpu, just dualboot it with osx (hackintosh)

If you can administer Linux and BSD you can adminster OSX. That being said the best way to become familiar with MacOS other than buying a mac mini (which I would recommend) is to run a virutal machine.

bull, managing a macOS fleet is very different than an Ubuntu fleet. For example think about package management.
for macOS the easiest is just to use Jamf Casper.
