Let's say in my teenage years I made multiple accounts using my real name and/or address, like paypal, amazon, etc. Some of them I don't remember, so let's just say there's 20 that range from having been last logged into in the previous month to over a year ago. Is it better to log back into the accounts I remember and delete them in order to "go off the grid" or is it better to just never touch them again?

If you want to play super secret agent or something, just create an entirely separate, 101% unconnected online identity. Don't use the same hardware, isp, ip, names, locations, habits, or anything else. Easier said than done of course, and probably a lot more trouble than it's worth.
