You can install any number of independent network monitoring tools, or even monitor your network signals directly.

You can't be sure of anything. All you can do is play the odds. And the odds are heavily against linux 'tracking' you. If you're truly paranoid, just avoid Unity, Gnome, snd KDE. They index and store information about your system and usage. Use a firewall. gufw is simple. Use strong passwords. Encyrpt private information. It's not hard to be reasonably secure on linux.

You can literally check the source code yourself. There are enough paranoid, autistic savants out there going through every line of code they can who would post proof of backdoors and security holes if found.
