Dudes, hypothetically speaking, if I make money off a legislative grayzone in the interwebs and hide behind a VPN, and if some butthurt sues me, will the VPN provider in the unforseen future, will they rat me out?

if the crime was committed in a country where the vpn is hosted and there's a serious suspicion that you've committed the crime then yes, the vpn provider is obliged to rat you out.
