I've used Ubuntu for years, and I'm installing linux for a friend
is Mint easier to use? I don't know much beyond Ubuntu

Ubuntu MATE. The only advantage of Mint is it includes all proprietary codecs and drivers which you can download during the installation of Ubuntu anyway. Although it's really a personal preference. I prefer regular Ubuntu myself.
To add to this, other baby's first Linux distributions could be: elementary, ZorinOS, openSuse, PCLinuxOS.

They see that you're using a VPN, and a lot of encrypted gibberish.

If you're using ssl (E.G. https instead of http) or Tor, Then the VPN provider also sees an encrypted stream of gibberish.
If you're using otherwise-unencrypted plain text, the VPN provider can see it, assuming they're even interested.
