I use Arch for a home server, it's fine.
But in production you want something you can leave alone forever and have it keep tickng over, so yeah go with CentOS or whatever.

Well, we are talking about a HOME server. I have one too and I actually turn it off when I'll be out and about for a while. And I could easily have arch or gentoo on it (but I don't).
If you're server web pages or something then sure, 1h uptime would tell us a lot. But it's not a CentOS box in a datacenter we're talking about here. If it was then it'd probably look like this:
