So I'm buying a used laptop and was wondering what sort of testing should I do to make sure everything is in working order.
The laptop in question is a Lenovo Y70.

Anyway:
Check if it boots
Check i battery cycles
Check for dead keys
Check if the carger aint shorted.
Check charger port, if it is not fucked up
Check temps (Both CPU and GPU)
Check audio: Get VLC and put it in 200% volume see if the sound is ok.
Check for screen scraches
Check dead pixels
Check if fan works
That's it. A bit of advice, lenovo quality fell a little. So do not expect the lenovo brand new experience.

Lenovo has third party vendors that they certify to sell refurbished laptops. If it's not from one of those people then i'd stay away. You can find a lot of the legit refurbished sellers on eBay.
