Mate because it's the only one that doesn't explode every 5 milliseconds while also working without systemd and simultaneously allowing enough customization to make its usage smooth (which is to say, it comes with really fucking good default programs - there's no non-DE pdf reader worth shit at all, for example, so any DE that doesn't come with good custom programs is automatically unusable in practice, and that includes the likes of xfce).

Echoing this although not for init autism. It's the most stable DE by far, and the fact that the gtk3 build looks great is awesome. Xfce has a few more stability issues than mate does which is kind of disappointing. And don't even get me started on the bugs with KDE.

It's subjective, it depends entirely on what do you want your desktop to look like. Pretty much all desktop environments are incredibly customisable, so fretting too much over it is pointless. Just pick one and customise it to your liking.
