I'm using GNU/Linux systems as normal user since several years. Ubuntu, Fedora, Manjaro... I tried every distro that is user friendly, but I want to learn more deeply about GNU/Linux, like doing almost everything from the terminal, building packages and so.
What do you reccommend /g/entlemen?
Check out a book called Unix Made Easy. It's old and hard to find but the best book on the subject

You have basically two options going from Ubuntu:
Install Gentoo from the handbook(AMD64):
https://wiki.gentoo.org/wiki/Handbook:AMD64
Go deeper and do it from scratch:

Personally I think the second method is harder, but mostly tedious and you don't really learn anything extra. Arch is also an option but I hear a lot of bad things about its package manager. Also if you have the option, do it on a laptop instead of a desktop

Try something like Void Linux or Alpine Linux. They both are very minimalistic linux distros without being sadistic.
Slackware is good too, but it doesn't have dependency resolution: basically, when you install a package, you'll need to install all of its dependencies manually.
And then of course there are distributions where you do everything from scratch: Gentoo, Funtoo, Source Mage, LFS, etc.
Personally, I would recommend Void Linux: it's like an even more minimalist arch and it's also closer to a *BSD (OpenBSD more than anything else). It makes it easy to tinker with it.
Try Manjaro
