I think it looks alright, but I don't like how it's inconsistent with the rest of the OS' theme. The same is true on GNU/Linux.

They're not. They're making it conform to the design philosophy of each individual operating system that it's run on while trying to keep their design philosophy prominent. It's difficult. Especially if they clash. Which is why iTunes looks how it looks on macOS and Windows.
