I stopped using Ubuntu a long time ago, but what I used to do to avoid the bloatware was to install Ubuntu Server and add only the stuff I needed. Since the kernel is not different anymore, you can rice from scratch with the server version.

MATE beats xfce now in pretty much every way. Whisker menu has more features, but it's not enough for me to warrant. Mate is without a doubt one of the most stable DEs and best Ubuntu flavors on the market right now.

There is no 'botnet' in Ubuntu. Even Amazon search is turned off by default in the latest LTS.
The most intrusive features of Ubuntu essentially amount to a system-wide recently-used items tracker. You can shut it off in the privacy panel if you like, but none of that information ever gets sent to anyone by default - it's just designed as a convenience to you.
