Tor exit node is an idea. You could also make it a DNS caching/forwarding server. It can be an auto torrent downloader(sick rage + couch potato+ torrent client). You could learn how to install Gentoo on it.
Alternatively you could use it as a micro controller for literally countless projects from robots to thermostats.
Turn it into a wireless access point without any password and datamine normies.
