I've been using open/libreELEC on a pi for the past year about, but I've somewhat recently frankenstein'd a computer into a home server.
Since then I've set up Plex and have been having fun with it (despite its proprietary nature). The portability is probably the nicest part of it.
I don't like RasPlex though, as it hinders me from watching non-library media (dude PORN LOL) while LibreELEC has a file browser. The actually viewing options are better with LibreELEC as well: Not only does it have a better in-progress menu and dynamics in my opinion (it doesn't pause as soon as you start to FF/Rewind), but there's no scroll bar I've been able to find in the library view outside of downloading a skin and using a certain view.
But enough about me. What do you guys use? Have any tips or any other shit I should check out?

I should also note that I have roommates and a few other residents that'd like to make use of my server, so in that regard Plex is probably safer and definitely easier than setting up some weird SFTP restricted key-based media server thing. Or maybe Samba, but I'm hesitant towards allowing that (even with passwords) in such a public network.

how good is kodi at transcoding? is it near the level of PLEX?

That's the main problem with Kodi. It's not so much a media server as a client with nifty scrapers and add-ons and plug-ins. Any transcoding is handled by the client.
Not a big deal for some, but for me and other RPi2 users (not sure how pi3/odroid/etc fare), it means it artifacts on 10-bit color and can't handle h265 very well at all.
I use plex and its just the best option. Along with chroot sftp jails for certain users to upload movies n shit if they desire. Plex is just much more portable and i fucking love it.

kodi is not client-server. Damn shame too, plex lacks some really nice functionality in a file browser like OP mentioned, subtitle downloader, you can manage your library however you want (smb, ftp, sftp, nfs, etc).
I run Kodibunu on an Intel NUC, using Kore android app as the remote.
I have no need for mass storage as I just stream Mr Robot with Exodus plugin, the whole system will be forgotten about once the series finishes until Walking Dead starts again.
Here's a thing I'm wondering for a long time. Why do some people prefer collecting movies to nas, and stream it to their kodi/plex instead of just using kodi add-ons? Why would you want to wait for downloading the movie, while you can watch it while downloading, and forget about it after you watched. And old/unpopular movies won't even have seeders, so what's the point?
