do regular backup on a hard disk
use 2nd hdd connect once a week, keep extra backup disconnected most of the time

Should work like this.
At least one, which you only connect to your computer when you make the actual backup. You can use 2 drives to be sure, but 1 external one you only connect to backup should be fine.
