Yes, I don't really need OS X, but I'll probably try it out out of curiosity, to see what it does to the battery life mostly.
Right now I dual boot Windows 10 and a couple of distros, having both an SSD and HDD on a 12.5" laptop is pretty neat.

It's always hard to describe something like that. Each person has different preferences.
But think something like an oldschool Thinkpad in a metal casing and newschool TP keyboard.
They are big and bulky like Thinkpads so I would say the only thing they have in common with Macbooks (looking at you, >>56326707 ) is the metal casing and a chiclet keyboard. Every laptop nowadays have chiclets though and Elitebook keyboards are pretty damn good ones.

With mine I only have two complaints: I can't for the life in me seem to get the clitmouse press-to-select feature to work under Linux and the up/down arrows are cramped together. Other than that I love my big sexy mama (8560W).

Battery life on El Capitan is quite all right. Comparable to Windows 10 and Arch+Gnome. It's more about which browser you're using with it. Safari and Internet Explorer are great with batteries, but I suppose if you need Firefox's Tree Style Tabs addon or any other productivity addon for work, then those 10 minutes of difference probably don't matter anymore.
Besides, uBlock Origin with Advanced User settings might cancel that out again.

At the very least, I have never really compared battery life anymore, but it might just be nice for you to try out a different OS or to see how you can get it working well enough. We're on /g/ after all.

I already have OS X on the desktop, but rarely use it, but I can see it being a bit more useful on a laptop, it's already a very laptop-centric OS.
But more than anything else, I'm considering having a couple of Windows installs, one stripped down to bare essentials and configured for maximum battery life and another so I can use all the features like wireless display, orientation sensor, fingerprint login etc.
Chrome OS was supposed to serve the role of a battery extending OS, but it was actually very mediocre for some reason. Windows 10 with Edge has been the best, it can get 6 hours battery life when watching YouTube.

Couple of tips for you in that case:
Windows Enterprise LTSB 2016 is now released. It's Windows 10 Anniversary Update, without any recent Windows crapware. A great starting point for stripping it down, but there's no Edge. There's still Internet Explorer, of course.
From there, for extra battery life, you can set MPV and youtube-dl up in there, disable Javascript in Internet Explorer, and have your mpv.conf contain only

vo=direct3d
ao=wasapi:exclusive
hwdec=auto
ytdl-format=bestvideo[height<=?768]+bestaudio/best

Then all you need to install after a Windows is your drivers (optionally use sdi-tool for even less bloat than HP software), mpv, youtube-dl, dxwebsetup.

It takes a whole lot of steps to produce a good laptop. Luckily many steps are already ready to be adopted. High quality matte screens are not developed by HP, Dell or Lenovo. The chips are from all over the world.
