For everyone else, being taught by video tutorials that gradually introduce concepts when they are necessary rather than just waves and waves of infodumping is going to be much better
The only good course there is the Photoshop course, 4 part series from noob to advanced.
I highly recommend that one if you want to learn photoshop

i have a full subscription through my work. a the videos are 5-15 minutes long and claim to teach you GoLang or full stack development. In a 15 minute introduction.
Its the rosetta stone of IT training materials. Cute but lacks any depth and nobody is using this to learn anything significant. (important note: i do not give a fuck about rosetta stone for spanish which i assume works but for ching chong languages they barely teach you anything)

but for GUI software you have a point. describing the operation of a GUI is so tedious or so vague that it makes it sound hard, and most people resort to screenshots, making for a book that's not fun to read or cheap to print.
