Go for it. I just finished up a project with an x200 laptop and Libreboot. It was fun, I learned a lot, it's interesting.
If you're new to this kind of thing, you may have questions during the process. My advice:

Libreboot is a distribution of Coreboot. Look at Coreboot's compatible hardware list, it may differ.
Also if you want a laptop with Libreboot pre-installed, check out Libiquity if you are in the U.S. I bought a laptop from them last year.
