Unless you have Windows 10 Enterprise you are going to get fucked over. They even removed most if not all options to block updates in the Pro version recently. Also every update you do is going to reset your settings so it automatically updates again.

that's not surefire, actually. If someone else connects a Windows 10 machine with more recent updates to the same network, then your machine will fetch updates from that machine. Even if the network cannot reach the wider internet.
