I have recently spent a lot of time with programming, I would consider myself a beginner. Specifically I am working on a few projects which include Ruby on Rails (HTML/CSS, JavaScript, Ruby) as well as some Python. I don't plan on getting a degree in computer science but I want to know how "difficult" it would be for me to find a job later down the road? Are programming jobs easy to find, given you have the knowledge to fulfill your tasks?
You can have all the knowledge you want but without a fancy degree you'll get nowhere.

I don't think that's true. Every programming interview I know of includes practical part where you solve problems or discuss problems and every single one of them cares about what projects you did in the past more than they might care for, idk, Harvard degree .
On the other hand certificates are actually important and you might need those to even get to interview.
