Considering MIT license ships with copyright mention, does that mean that I can as a copyright holder change the license at will but others can't?

Yes, if you're the copyright holder, you can change the license to whatever you want. However, if anyone else has commited code to your repo, they're still under the original license.
However, any released copies of previous versions before the license change as still be under that original license.
