It's open source so yes it's botnet free. Per /g/ definition, though, everything connected to the Internet is a botnet and thus only TempleOS qualifies as truly botnet free.
For Ubuntu I would recommend Xubuntu or Ubuntu MATE. Keep in mind that if you for example don't like the default file manager you can always replace it.

Plain Ubuntu uses Unity as it's desktop environment. It had some Amazon search thing enabled by default which made the community really upset. Still there but at least it's opt-in now instead of opt-out.

If I wanted a barebones Ubuntu installation, like no WM or anything so I can then customize myself, what is recommended? Ubuntu minimal or ubuntu server or something else? I need ubuntu because Unity3D only officially supports that distro but I kind of want a real minimal install.

I just did a Ubuntu Minimal + i3wm install. It's pretty comfy.
