Open source alone doesn't convince me and I'm not going to look at the code myself, nor would I understand it anyway. I don't trust that "[UNOFFICIAL] [6.0] CaramelROM [N5] [BDR] [7/11]" has been adequately vetted by the community.

Replicant if your device is supported. It focuses on privacy/freedom and not too heavy on features that pajeet would otherwise heavily bloat in his custom ROM which would consume your battery & not guarantee it's not a botnet.

I used "'"'"'stable'''"' releases of cyanogenmod and they were buggy and I even had bootloops

I get this too on my N4. Unpausing music is really loud for half a second. I also get no MMS, random openings of the camera, etc. As soon as jolla/sailfish/whatever comes to the west, I'm using it.

MMS works for me on my Nexus 4 with CM13. Make sure your APN settings are correct. The only glitch I have is the lock screen opening sometimes unintended.

Is it still possible to root a Note 3 that's on the latest version of Android?
