After seeing what M$ are doing with 10, I've decided to fuck it off and go back to 8.1 - are there any downsides I should be aware of?

just remember classic start and you should be okay
You won't have DX12 support or window snapping working properly with multimonitor setups.
And you will have a fullscreen start menu. But that's about it. Personally I didn't even bother installing a classic start menu because I don't give enough of a shit to begin with.
Other than that, you're doing great. You will benefit from:
-Slightly better performance than Windows 7
-A system that is more up to date
-Consistent design, outside of the obvious start menu
-Slightly faster boot times than Windows 10
-Not having cortana run on the background at all times
