I found this HP Rp5800 and a few other things heading to the trash today. My question is, what the hell can I do with this thing? The only thing it's missing is the HDD

Nice find, OP. You could definitely use it as a HTPC, either by slapping a PCIE card in it or running it off the integrated graphics, whichever works better for your needs. Most configurations of that box are actually considerably stronger than my current system.
