Just get a propper office chair, forget the huge puffy chef chairs.
Something like pic related has all the features you should need:
- adjustable balancing counterweight keeps your back in slight motion
- great build
- adjustable armrests in height and orientation
- adjustable backrest
Most important thing is that its absolutely customization to your needs. Also look up correct sitting posture so you configure correctly

I think its pretty much fact that sitting 90 degree upright isnt the best but idk how specific you need to get. I think a slight lean back is fine.
more important is the eight of your chair compared to the table etc
