I have 16 of these 500GB seagate drives that are just sitting here.
I'm thinking of putting them into good use. I'm a video editor and need fast drives. Is it a good idea to get a ... x bay ( 8 < x < 20 ) RAID enclosure and use them this way?
I have a MSI X99s SLI Plus mobo, so I can use eSata.

So, a single HDD is also 6gb/s. I RAID 0 a whole bunch of them to increase the read speed up to 8x. But then because of the connection between the enclosure and PC (wither USB 3 or eSata) it will be all wasted?

You can buy a pcie raid card and use that. Using USB3.0 or esata will most likely bottleneck such an array. The only problem is that your case might not be adequate.
