Literally has been 2 years since I touched Linux Distros. Which is the stablest distro out there currently in your opinion?
No such thing as a stable distro. Only way to acheive stability is to use an old most reliable version of whatever distro you're using.

Desktop, primarily for coding/scripting, I actually walked away from Debian Testing (I think it was Jesse at the time) because there was a problem with getting my gpu to work. Also the bumblebee project was in its early stages, but I am glad it is making a comeback.

Nvidia binary has native support for xrandr sinks if you want to try the baked in optimus support.
Its faster than bumblebee but if you want to turn the dGPU off you need to restart X.

CentOS is the most stable. It's basically an open source version of Redhat Enterprise Linux. However it's a server oriented distro so you'll probably want something less stable but with more features, like Ubuntu or Fedora.
FreeBSD. FreeBSD is the stablest operating system, and in the literal sense of the word "Distro".
