I use veracypt. Truecrypt 7.1a fork. Still being audited in it's entirety, but no problems yet.

Right click -> encrypt this folder on a windows virtual machine on a truecrypted puppyhat linux OS with double rubberhose encryption on the drive. I then bury the drive 30 miles out in the Appalachian mountains surrounded by thermite that will release if I don't visit and manually enter a 64 digit password at exactly the same time (down to the minute) twice a day. And just to be safe, I use a different password than what I use for my gmail.

If I encrpyt a drive or folder in Windows, can I later change motherboards or CPU?

I don't keep things like bank logins on my PC. If someone want's to look at my CV or technical files that I have written for work they are free to do so. Privacy concerns come more from having a smart phone that lets google/apple/Microsoft/PIM read all my e-mails, texts track my movements, phone calls and generally anything I do. Encrypting your hard drive if you have a phone is nothing but a pacifier for old babies.

I have zip with password for pictures. I have Excel with password for password and "contacts." Everything else Google Drive with two step auth.

OpenBSD vnd (vnconfig), but I guess full disk encryption via raid (bioctl) might be more interesting to some people.
But having my home directory encrypted is enough for me. Anyway swap is also encrypted by default, and I use memory-backed filesystem for /tmp and such.
