Can a bad GPU cause a PSU to fuck up?
I recently had my PSU explode after installing a new gpu and can't tell if it was caused by a bad GPU or I was stressing the PSU too much.

Usually we expect the psu to be safe and protect the system, so even if the gpu had some kind of fault, the psu wasn't good.
The only way a gpu can kill a psu is if the psu is shitty itself - a good psu will have over current protection to prevent explosions.

open up to PSU, discharge the big input caps and take a photo then post it here.

best way to do this is by shorting out the terminals with a large piece of metal. It is absolutely essential that you use something large with a low enough resistance otherwise you will burn your house down.
I'm kidding, don't do that.
