What can I do with adjustable dumbbells that go to 100lbs each?
just about any upper body exercise that you can do with barbells too, but with dumbbells instead. Use your brain. Also you can buy additional plates for adjustable dumbbells too, see e.g. what bugenhagen does for his DB snatches or whatever

Literally just a bunch of random exercises slapped together with a slight regard for doing similar body parts on each day
It's barely okay but it needs less variation and more consistency. You can do the same exercise more than once a week. And it's recommended, too.
