I work at a high end steakhouse in Wyoming, I eat elk and bison probably 3-4 times a week and get paid to do so. Feels good man

It's a bit like venison, has a distinct wild game flavor but at the restaurant we get our elk from ranches so it's a little fattier than real wild elk. It's still very lean, but the extra fat gives it a little more flavor
