>Pre-heat oven to 425f
>Place a sheet of cooking parchment paper (available by plastic wrap/aluminum foil) on a baking sheet. Make sure it has a lip all the way around!
>Place thick cut bacon (I prefer hickory or bourbon) one layer deep
>using a pepper mill grind a generous amount of pepper over the top to taste
>bake to desired crispiness, remembering that it firms up after being removed from the sheet
>allow fat to cool and save in the fridge for later use
>good for a snack or crumbled into something else

I live in LA so I can get goat meat from Mexican or Armenian markets. But in general though, people in the west find the taste of it to be more "gamey" than cow, chicken, etc. just as a heads up. I'd bbq that shit if I were you for your first time.

How do you guys tell the difference between "good" and "bad" ayce korean bbq places?

My boys and I have been to a $12 lunch little mom and pop place and a $25 dinner at a big chain in LA, and they insist that the $25 place btfos the $12 one. I personally just think all the cooked meat tastes the same.
