I fast for 2-3 days, then eat maintenance for 2-3, fast 2-3 etc.
Problem is, i always put most the weight back on i lost, i make sure im drinking enough water and getting mild exercise.
what could i be doing wrong?

Just stick to a 500 calorie deficit you fucking idiot. Your hormones are fucked because your body things it's starving.
Because most of the weight you lose in 2-3 days fasting is water weight. If you want to lose fat go longer like 7+ days you can lose about 2/3rd lbs. per day over the long term. The initial massive loss is still water weight though.
