I'm looking for solid books on nutrition. No fad diet books, but I'd like solid, proven textbooks on nutrition.

I'm not looking for some pseudoscience stuff like Eat This, Not That. I want researched textbooks. I have a master's in cellular biology and am working on my PhD. I'm not afraid of sitting through something arduous or learning from scratch.

So far my research has shown that

> Barasi's Human Nutrition

Any other suggestions that anyone would like to give me?

Nutrition and Biology have a lot in common. They are far from the same thing. I remember a few bros mentioning that they have BS/Master's in nutrition.

I don't have the time or funds to go back to school, but I'd like to be educated on the subject.

I've asked a few of the professors in the dietetics and nutrition program here, and they just tell me to take the course. They won't even let me look at the syllabus.

I have fitizen library on electronics elsewhere, if it has a nutrition section I'll throw it up tomorrow night. everything in it regarding training kinesiology and etc is well vetted. Cyclefag and caladan might be able to help too, but I haven't seen them in quite some time.
In the meantime Alton brown- I'm just here for the food is excellent for understanding the chemical reactions involved when you actually cook food, depending on how you cook it etc. Beyond helpful, he's a good egg.

Don't waste your time. Literally nobody on this planet understands nutrition in a provable way, otherwise there wouldn't be 100000 conflicting theories
