On that topic i'd like to suggest a few:

I'd call it something like an almost forgotten classic. It's a fairly enjoyable military/mecha/comedy series, Not deep or particularly intriguing yet unexpectedly entertaining. The comedy in Fumoffu especially caught my attention.

>Space Brothers (Uchuu Kyoudai):
I wouldn't call it underrated, nor necessarily non-mainstream, but comparing to the usual recommendations you rarely see it mentioned. This one is a real gem. In as few words as possible It's about the relationship of a pair of brothers and their attempts at becoming astronauts. The characters and the whole environment feels very real and relatable.

>The Count of Monte Cristo (Gankutsuou):
This one is very unique. Inspired by the novel of same name by Alexandre Dumas we're taken on a journey through a sci-fi version of the 19th century's french aristocracy where a young naive man meets a mysterious and eloquent man with interesting motives. I'm still confused by how it comes together so well. The series has very unique art which might turn away most viewers, but get used to it and I believe it enhances the show's atmosphere.

I guess it's highly subjective if you enjoy this one, more so than the aforementioned series. Shiki has a very slow start where we slowly get to know a few characters living in a small village and the mystery (vampires) that plagues them. It gets you thinking about what it means to be human and how cruel we can become. It's surprisingly deep for a horror novel adaptation.

I was reading a Junji Ito story recently about a girl who moved next to a graveyard.
The neighbor next door was this super fit guy who would go out at night and lift the tombstones (those japanese obelisk looking ones) and turn them to face his balcony so every morning he would flex while they were facing him.
He claimed he did that so that the ghosts could check him out. At the end there were some oh so spooky panels which showed that there actually were ghosts spying on him and the girl.
