I work full time in the law enforcement sector (policing + military) and have always wanted to own my own business. Something that ties in with my line of work is physical fitness.
Is the fitness industry too over saturated to make a couple extra hundred a month?
Whether you open up a gym, start your own clothing line, personal trainer etc.

Any basic niche suggestions to get the gears thinking?
Isn't fitness on social media (outside of YT) is generally over saturated as well?
gym depends what kind but profitbale, yes
clothing line - you need a brand and good names to do that, so nah if you are nobody
personal trainer - aka bitch that doesnt know anything
personal trainers are the worst of fitness industry, I love that they call themselvs PT so coach is still untouched
get specialization like bb, wl, pl, crossfit, strongman, general strenght coach etc not a fucking PT which screams im a bitch that knows 5% of everything but doesnt know shit in general

Gyms in general can be very expensive especially depending on where it is located. You have pay for rent, utilities, equipment etc. I wouldn't recommend it.

Pretty sure most 1st world countries have insurance requirements too. Or at least it's heavily recommended.
People are likely to do something very stupid, then try to make you pay for the "medical bills"
