Also, something to keep in mind is that I exercise regularly in the gym.

Few hours after the workout. I would recommend the evening.

Get used to eating shitloads of healthy stuff... alternatively, include calorie dense foods such as almonds, use olive oil as salad dressing etc.
Eating once a day is unhealthy and bad for gains.
