I am looking for your favorite healthy recipes that can be made on a budget. I'm looking to keep my daily caloric intake at or under 1200, and I usually eat two times a day.

There's this simple recipe for lazy people or people that generally aren't good at cooking which works like a charm.
Pick whatever veggies and/or potatoes you wish, put them all in a bowl with some oil and season it
Get some fresh whole fish of your choice, give it three cuts on both sides and season on both sides as well
Put these two things in a oven safe dish, use some more oil on top of everything and some white wine of your choice, put some lemon slices and juice too wherever there's space
bake it, takes like ~40mins but times vary based on thickness of food, each personal oven and all that
(oil used is olive oil)
