Sometime in the future I want to start a beginner strength program (probably Greyskull or a bodyweight routine).
I am already running 3 times a day (couch to 5k) and I was wondering if doing three days of a strength program and 2 days of running with 2 days rest on the weekend would be overkill?
I have some experience lifting, I tried doing SL for a while but stopped when I maxed out my dumbbell set.

Not overkill, I do 6 days a week of strength training and 2 days a week running

I do the same thing and no it wont over train you.
Over training is when you work out all the time sometimes multiple times a day with no rest days and even then I have a hard time believing over training because I worked 6 10 hour days a week doing manual labor and lifting heavy with only 3 breaks per day and I never over trained.
