post your favorite recipes and ways to prep food. just picked up some sweet potatoes, how do you guys make yours?

i leave the skin on, way too much trouble to remove it, and some of the nutrients are in it. but i have read that the various chemicals used in growing them tend to accumulate in the skin, so probably a good idea to shell out the money and go organic. don't quote me on that tho
