Mushroom Tarts
1/4 cup toasted walnuts, finely chopped
1 cup chopped wild mushrooms
4 tbsp. healthy vegetable oil
1 pkg. vegan phyllo pastry sheets
Add 3-4 tbsp of soy protein powder to bump up those protons!
Somewhere between a protein smoothie and a bar, meant to be kept in a small jar in your pocket for when you need very quick, portable calories on the go. And I mean “I’ve less than 20 seconds to get a whole lot of macros down my throat” kind of hurry, like being a restaurant worker.
• 1-3 cups water; depends on how pasty you want it
• 1/4 cup (4 tbsp) peanut butter, creamy
• 1-1/3 cups oatmeal, quick or old-fashioned, ground with a coffee bean grinder
about 80-100g protein worth of protein powder
• 2 to 4 tbsp honey, raw/unfiltered
• (optional) 1/4 cup flax, ground; you’d need more water in this case
Space-saving alternative: replace oatmeal with:
• 2/3 cup steel cut oats, ground with a coffee bean grinder
Because steel cut oats have twice the carbs, protein, etc. for an equal measure of the regular stuff.

The proteins in peanut butter and oatmeal compliment each others’ amino acid profiles (I think), the sugar in raw honey is digested quick enough to feel it nearly immediately (and is comparable to fruit in how healthy it is, unlike candy bars), and the slow-digesting complex carbs in the oatmeal and the healthy fats in peanut butter (plus the fiber in both) ought to make you feel full longer. The last two properties are enhanced with the addition of flax.
I keep mine in an empty bottle of honey — sealed in a big Ziplock in case the lid pops! — though if you don’t have big honkin’ cargo short pockets then a smaller one ought suffice like seen in the second photo.
