I keep track of what I do for my sets for each lift and try and beat them every week. I dont keep long term records I set goals instead like 3pl8 bench.

I find it nice to have a record like this to look back on so I can tell how far I've come and how faster I'm getting better. It also gives me a rough idea of when I'll hit my goals
If you're putting your numbers in a spreadsheet, you might as well plot. Good for setting goals and taking stock of any trends in your progress.

For example here you can see two distinct periods of injury that I've had in the last two years. You can also notice the noob gains at the beginning, and extrapolate something like the rate at which my squat is going up today (about 5 lb every two weeks).
I used to track everything. Wish i didnt stop but everytime i think this and open up the file i change my mind.
Definitely helps you catch what works for your body.
