Rice or Quinoa with lean ground beef, chia seed, peanuts, and eggs cooked in coconut oil. High in protein as well as calories. I season with curry and sriracha sauce. You can add a little coconut milk as well for more cals and taste.
Eat peanut butter by the jar.
