the entire pec contracts on any pressing motion. you can just favour a certain area over another depending on angle. incline does hit it but poorly in comparison to decline or dips

You can't target it. You can only emphasize the entire low/larger portion of the pec, or the entire upper/smaller portion of the pec. No isolation of the heads, definitely no isolation of parts of the heads.
The way your chest will grow depends entirely on your genetics. The amount of fiber you have on each portion of the muscle , where it attaches , and the shape and length of the bones underneath.
You can target the clavicular portion of your chest by doing "upper chest" exercises, but the middle-to-lower portion will grow as it wants, all you can do is tell it all to grow and just like inflating a balloon it will take its natural shape without much you can do about it.

Close grip is used to target triceps more, so normal grip.
